An important individual within IPC's Strategic Investment Department, Aventurine is the second character released in Honkai: Star Rail 2.1, following the arrival of Acheron, the self-made Galaxy Ranger.
Capable of summoning impenetrable shields, his proficiencies involve follow-up attacks too, making it a bit awkward to build him around both. Fortunately, that's where we come in.
Aventurine Best Build

Cunning, meticulous, and indulging in riddles, Aventurine seems to have a hidden agenda coming to Penacony, but his gameplay kit was already revealed weeks prior for the world to see.
In Honkai: Star Rail, his playstyle revolves around his Fortified Wager shields, protecting all allies while generating Blind Bet stacks to unleash follow-up attacks against random foes.
Follow-up attacks seem to be a common theme in the IPC, with Topaz also specializing in them. Regardless, Aventurine's profile differs in the use of his shields, and his best in-game build should look like this:

Staying true to his kit's most promising potential, this overall setup makes Aventurine a legitimate stone wall to bring down, notwithstanding the improved toughness of his shields to allies.
He might even be miles better than the Fire Trailblazer who's arguably the best early-game free-to-play (F2P) tank in Honkai: Star Rail (unless you get lucky with your Stellar Warps).
Aventurine Alternate Light Cones
Surprisingly, despite his Fortified Wager shields being his most prized ability, Aventurine can also deal respectable follow-up damage due to his Talent, Shot Loaded Right.
So, you can also use a different Light Cone if his exclusive 5-star one, Inherently Unjust Destiny, is just too hard to get. These are some amazing suggestions depending on how you want your Aventurine build to be:

Aventurine is a hugely versatile character to play with, being defensively astute and offensively capable.
As such, swapping his Light Cone for a more suitable one that synergizes with your current team composition is still viable, such as equipping the Trend of the Universal Market to complement a DoT-based party.
Aventurine Alternate Relics

If you're playing Aventurine as a true tank/ guardian, the full Knight of Purity Palace set is recommended. But, this can be changed on the fly to accommodate different Aventurine builds.

Combining these 2-piece sets ensures you cover all the bases (attacking and defending benefits). Plus, Aventurine's follow-up attack's damage is based on his overall Defense stat as well, so you're bolstering his potential DPS either way.

The Inert Salsotto set gets Aventurine's Critical Rate slightly higher, and this can be further increased through gear stats.
Hence, getting it past 50% won't be too hard, especially when you want to take advantage of Aventurine's Ultimate's Unnerved debuff on enemies.

Aventurine's team role is quite flexible, letting him join anyone on almost any team requiring a tank/ sustain.

Penacony Dream Team

Penacony's finest star-studded team as of yet, grouping Aventurine with the other Penacony heavy-hitters is a joy to watch albeit an excruciatingly difficult one to achieve.
Acheron is the team's main DPS dealer, with Black Swan applying her Arcana stacks to facilitate Acheron's Ultimate.
Sparkle does Sparkle things by giving ample Skill Points for everyone to utilize (besides Advanced Forward and damage buffs), letting Aventurine spam his Fortified Wager shields often.
Overview

Aventurine's role as the party's tank/ sustain is unquestionable. His Fortified Wager shields not only protect allies, but they also improve their Effect Resistance.
His Blind Bet stacks (subsequently, his follow-up attack) are what you can experiment with him, creating different builds and applying various gear that could lead to some ingenious strategies.

Getting Aventurine's Traces up is a surefire way to conserve your Skill Points during battle, immediately allowing your DPS-focused characters to wreak havoc.
Besides these three primary ones, Aventurine's other Traces improve his Imaginary Damage, Defense, and Effect Resistance, making him even harder to take down!

By having Aventurine's Eidolons unlocked, he is ever closer to becoming the legitimate threat that he was in the Penacony storyline!
That being said, it's going to be a grinding nightmare because you'll need infinite amounts of Stellar Jades to do so (unless you purchase them using real-world money).
Fortunately, Aventurine is already great without his Eidolons revealed, so casual players can still enjoy him the most by pulling for him through actual gameplay.
