I have HTC Magic Airtel Locked.

Now how do i update to 2.1 or Install Custom Roms on this phone.

I am a complete noob, so pls suggest me a good guide to install Custom Roms

i have tried lot of methods & tutorials, even tried Gold card but nothing is working.

Have you tried Universal Androot or Z4Root? Those allow you to root your phone then you can install Rom Manager to allow installing of custom ROMs
