Hi John ....... this is for HTC Hero (Orange UK version) but should be the same or similar for whatever you have.
From the home screen tap the little 'up arrow' bottom left of screen to take you to 'all apps' then tap on 'people'
On the list of contacts tap the one you wish to edit
Once that contact is displayed press the hardware 'menu' button and then tap 'edit'
The contact datas fields are displayed for you to edit .... or you can add new fields by scrolling to the bottom and tapping 'Add - add more information' which will throw up a selection of additional fields that you may choose from if you wish to.
Lastly don't forget to save the edit by tapping 'save' at the bottom of the edit screen.
